Tenderized Pork Cutlets with Spicy Beer Mustard Pan Sauce

- 4 cutlets tenderized pork cutlets
- ¼ tsp kosher salt
- ½ tsp fresh ground black pepper
- ½ tsp smoked paprika
- ½ cup all-purpose flour (or bread crumbs for a crunchier crust)
- 2 Tb neutral oil
- 1 Tb butter
Spicy Beer Mustard Sauce
- ⅓ cup Buzz Savories Spicy Beer Mustard
- 1 Tb honey
- ½ cup chicken broth (or half water) (or half beer)
- 1 Tb cider vinegar
- 2 Tb cream or butter (for finish)
Prepare the Pork (this is key for tenderness)

Heat a large heavy skillet to medium-high
Add oil and butter
When shimmering, add pork cutlets in a single layer
Cook 2-3 minutes per side, until golden brown
Remove pork to a warm plater and tent loosely with aluminum foil
Make the Spicy Beer Mustard Sauce
Lower heat to medium
Deglaze pan with chicken broth, scraping up browned bits
Whisk in Spicy Beer Mustard, Honey, Vinegar
Simmer 2-3 minutes until glossy an slightly thick
Finish with cream or butter for richness
Serve (two excellent options)
Option A: Spoon sauce over pork cutlets and garnish with parsley or chives
Option B: Serve sauce in small bowl with pork on a wooden board, add roasted potatoes or crusty bread
