I’ve been eyeing tenderized pork cutlets for years. They look fresh and tender and tasty in the meat section, yet I hesitated to buy since I’ve no tried-and-true recipe for preparing a tenderized pork cutlet.
With winter still in its stride, Pork Cutlets circled around in my thought and I searched my sources for recipes to cook a tenderized pork cutlet. Following three practice sessions, I “landed” on a recipe so fine that I now regret the many years I overlooked tenderized pork cutlets.
Spicy Beer Mustard Pan Sauce takes the cutlet from common to blue ribbon excellent. Tenderized Pork Cutlet with Spicy Beer Mustard pan sauce now lists among favorites for dinner.
Prep is a 10-minute process – simply season, sauté then set aside and stir the Spicy Beer Mustard into the pan juices adding either beer or chicken broth. Finish with 2 Tb honey and 1 Tb vinegar or fresh lemon juice and 2 Tb. Cream or butter (optional).
I most often serve the cutlet with roasted potatoes although broccoli or cauliflower roasted on a sheet pan show off nicely on the plate and add their unique flavors.
